As a deputy district attorney in Los Angeles County, Ito started his legal career. He first worked in the Hardcore Gang Division of the office before moving over to the Organized Crime Division.

Ito has had two marriages. His first wife was Margaret Ann York, the first female deputy chief of the Los Angeles Police Department. In 1999, they got divorced. Ito later wed Peggy York, a former deputy chief of the LAPD, in 2001.
Ito has a background in law and has also taught sushi-making seminars. He is also a skilled sushi chef. Also, he has made appearances in a number of films and TV shows, including one Simpsons episode where he played himself.
