Wilbur Lincoln Scoville was born on January 22, 1865. He served as vice-chairman of the American Pharmaceutical Association for the second term and was an award-winning researcher, professor of pharmacology, and chemist. A mention of milk as a remedy for pepper heat can be found in his book, The Art of Compounding. In addition to his organoleptic test, which measures pungency in peppers using human testers, he is perhaps best known for his ethnological studies.

In the early days of lab testing, the Scoville Organoleptic Test was used to measure the hotness in chili peppers. The test involves tasting prepared samples of chiles to determine their heat level.

He was awarded the Ebert prize by the American Pharmaceutical Association in 1922.
In 1929, he received the APhA's, Remington Honor Medal.
A 1929 honorary doctorate in science was also awarded to Scoville by Columbia University.
